Elaboration process


Illustration Glycyrrhiza GlabraThe root is the part of the plant, which is used and dug up by hand. Once it is dry, we boil it in autoclaves and extract a juice that by means of evaporation becomes a thick paste where we add glucose, sucrose and starch (depending on the type of liquorice we want to elaborate).

We pour the paste into moulds and once it gets cold, we have the liquorice pastilles or bars we market.
